About Havana on the Hudson
Havana on the Hudson is a new Cuban Catering firm established in the Hamlet of Gallatin, New York about 10 miles south of Hudson, New York. Maybe a better reference point is approximately 120 miles north of the Crossroads of the World, Times Square New York.

The Principals are Maria Victoria de Bernard and Julio Hernandez-Miyares , two wildly different backgrounds who nevertheless have a convergent passion and mission to bring Cuban Cuisine as they know it to Americans who don’t live near South Florida which is the home to most native Cubans in the United States. The Chairman Emeritus is Apita who is the spirit behind most of the recipes for the dishes prepared and served by Havana on the Hudson. Apita is more then a spirit even at 96 years of age. She is now living the retired lifestyle and relaxing in Miami, Florida but is still sought after for little known variants of the key recipes.
We just formed this company in the early part of 2010 and much work remains as the food preparation and service field is rightly wrought with many rules and regulations. Furthermore, as somewhat a progressive bunch, we are also actively working to source most if not all the ingredients from Miyares Farm or Columbia County , New York grown goods. We should be able to meet that goal except for the Tuna part of the Tuna Croquetas and the actual Black Beans.
